Chef recommendations include Deep-fried Soft Shell Crab with Green Mango Salsa on Mesclun Salad, Bouillabaisse with Vietnam Freshwater Prawns, Baked Escargot in Paris Butter Sauce on Mashed Beet Root Potatoes and Deep-fried Shrimp Mousse with Sugar Cane.
